Phytic Acid (Inositol hexakisphosphate/IP6) #

  • Chelates metals - seemingly mostly divalent - Iron, Calcium, Zinc, etc. Inhibiting their small intestine absorption.
    • Apparently this shit can even immobilize uranium in contaminated soil.
  • Principal storage form of Phosphorus in plant tissues. Present in seeds, bran, legumes, grain, cereals.
  • Non-ruminants lack phytase, so the phosphorus is not bioavailable… but neither are the chelated metals: IP6->IP1 is descending order of reactivity, and each phosphate is cleaved stepwise.
    • Phytase can be obtained from diet from wheat and barley. It’s also a food additive.
